One of the many things I enjoy about summer is ice cream! Yummy, delicious Blue Bell ice cream! (I also love to make my own healthier ice cream using my Vitamix. Recipe coming soon!) And of course I have always loved that magical shell of chocolate that hardens on the ice cream, but have you looked at the ingredient list lately??? YUCK! I sure don’t want to put all that junk in my body or my kids’ bodies. I had resigned myself to the fact that I would just have to forgo that yummy topping.
UNTIL…one day while researching coconut oil I stumbled across someone (I can’t remember where I read this, or I would give credit!) who suggested melting coconut oil with chocolate chips to make a magic shell topping. All I could think was…
Why hadn’t I thought of that?!
Coconut oil hardens when it gets below 72 degrees F, so of course it hardens when put on ice cream. I immediately tried it and was in love! I began to experiment how I could have a version that didn’t require any heating so as to keep the full nutrients of the coconut oil.
Here’s what I came up with:
- 2 Tablespoons coconut oil
- 1 Tablespoon raw honey
- 1/2 to 1 Tablespoon cocoa powder (depending on how chocolaty you want it)
Add all ingredients to a small glass jar with a lid. Mix well using a fork to remove any clumps. Pour over your ice cream and enjoy! During the summer this should stay liquid at room temp and be ready to use when you want it. If you like your ice cream year round, just stick the jar in some warm water to melt the coconut oil. Enjoy!
